Skinny Granola Cookie Wedges

I’m a crazy multi-tasker. Aren’t all moms? That being said, I love me a good multi-tasking dessert. 🙂

These Skinny Granola Cookie Wedges taste like a chocolate chip cookie but is in the shape of a pie, but also tastes like granola AND is low calorie all at the same time! See?? Perfect multi-tasker! And they only use ONE bowl.

And how can you not like a dessert like that?! Honestly though, this is one of the best low calorie desserts I’ve had. It’s rich, decadent and hits the spot with one single wedge. My boys LOVED it! Plus they freeze and refrigerate well, too.

It’s really simple to make. Here’s what you need to do:

  1. Combine the brown sugar, oil, butter, vanilla, salt, baking soda and egg white in a bowl.
  2. Add four, oats, nuts and chocolate chips and stir to combine.
  3. Pour into a 9″ pie pan and bake at 350 degrees for 13 minutes.
  4. You’re done! Slice into 8 slices and enjoy!

One bowl and easy ingredients plus only 168 calories per slice!

Instructions

  • Preheat oven to 350 degrees F. Combine brown sugar, oil, butter, vanilla, salt, baking soda and egg in a large mixing bowl. Stir until well combined.

  • Weigh or lightly spoon flour into measuring cup; level with a knife. Add flour, oats, nuts and chocolate chips to sugar mixture. Stir until just combined.

  • Scrape the dough into a 9-inch glass pie plate coated with cooking spray and spread to the edges with a spatula. Bake at 350 degrees for 13 minutes or until set.

  • Cool slightly on a wire rack. Cut into 8 wedges and ENJOY!!
